The honey is collected in the Pindus Mountains at altitudes between 400 and 600 meters. Ebion practices nomadic beekeeping by moving the mountain beehives and maintaining diversity. Ebion collects honey on a seasonal basis and this is the season for the classic Honeydew Oak Tree honey which comes from the fruit of the oak tree. The bees collect it from leaves and acorns and turn it into honey in the hive, exchanging it one to another while enriching it with enzymes. The more time the bees get to exchange the honey, the higher the quality of the honey, the lower the moisture, and the more packed with vitamins and minerals.
